Thai Chicken Salad Lettuce Wraps

Ingredients
  

  • 1/2 teaspoon miced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey
  • 1/4 cup creamy peanut butter
  • 1/4 cup plain greek yogurt
  • 3 cups shredded skinless rotisserie chicken breast
  • 1 cup shredded carrots
  • 1/2 cup diced red bell pepper
  • 1/2 cup golden raisins
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped cilantro
  • 6 cabbage leaves
  • 1/4 cup crushed peanuts for garnish
  • 1 lime juiced

Instructions
 

  • In a small bowl, stir together garlic, soy sauce, rice vinegar, honey, peanut butter and yogurt.
  • In a seperate bowl, toss together chicken, carrots, bell pepper, raisins, onions and cilantro.
  • Pour dressing over chicken mixture, and toss gently to coat.
  • Serve chicken salad in cabbage leaves and top with crushed peanuts and a squeeze of fresh lime juice.
