Thai Chicken Salad Lettuce Wraps

Ingredients

soy sauce

rice vinegar

honey

creamy peanut butter

plain greek yogurt

shredded skinless rotisserie chicken breast

shredded carrots

diced red bell pepper

golden raisins

chopped cilantro

crushed peanuts
for garnish

Instructions
In a small bowl, stir together garlic, soy sauce, rice vinegar, honey, peanut butter and yogurt.
In a seperate bowl, toss together chicken, carrots, bell pepper, raisins, onions and cilantro.
Pour dressing over chicken mixture, and toss gently to coat.
Serve chicken salad in cabbage leaves and top with crushed peanuts and a squeeze of fresh lime juice.
