Salad Ingredients
- 2 cups broccoli slaw
- 1 cup shelled edamame
- 1 1/2 cups chopped raw broccoli
- 1/2 cup English cucumber quatered and chopped
- 1/4 cup fresh mint chopped
- 1/4 cup fresh cilantro chopped
- 1/4 cup salted peanuts roughly chopped
- Toasted sesame seeds for garnish (optional)
Dressing Ingredients
- 1/2 fresh lime juiced
- 1/4 cup toasted sesame seed oil
- 3 Tb honey
- 2 Tb tahini
- 3 Tb creamy peanut butter
- 1 tsp chili oil
- 1 garlic clove grated
- 1 tsp fresh ginger grated
- Pinch of kosher salt to taste
- 1 Tb hot water (more optionial if you prefer a thinner consistency)
Instructions
- Whisk dressing ingredients, adding hotwater at the end to desired consistency.
- Prepare salad, toss to combine withdressing.
