Broccoli and Edamame Salad with Peanut Dressing

Ingredients
  

Salad Ingredients

  • 2 cups broccoli slaw
  • 1 cup shelled edamame
  • 1 1/2 cups chopped raw broccoli
  • 1/2 cup English cucumber quatered and chopped
  • 1/4 cup fresh mint chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup salted peanuts roughly chopped
  • Toasted sesame seeds for garnish (optional)

Dressing Ingredients

  • 1/2 fresh lime juiced
  • 1/4 cup toasted sesame seed oil
  • 3 Tb honey
  • 2 Tb tahini
  • 3 Tb creamy peanut butter
  • 1 tsp chili oil
  • 1 garlic clove grated
  • 1 tsp fresh ginger grated
  • Pinch of kosher salt to taste
  • 1 Tb hot water (more optionial if you prefer a thinner consistency)

Instructions
 

  • Whisk dressing ingredients, adding hotwater at the end to desired consistency.
  • Prepare salad, toss to combine withdressing.
