Thai Chicken Salad Lettuce Wraps
Ingredients
- 1/2 teaspoon miced garlic
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons honey
- 1/4 cup creamy peanut butter
- 1/4 cup plain greek yogurt
- 3 cups shredded skinless rotisserie chicken breast
- 1 cup shredded carrots
- 1/2 cup diced red bell pepper
- 1/2 cup golden raisins
- 1/4 cup chopped green onions
- 1 tablespoon chopped cilantro
- 6 cabbage leaves
- 1/4 cup crushed peanuts for garnish
- 1 lime juiced
Instructions
- In a small bowl, stir together garlic, soy sauce, rice vinegar, honey, peanut butter and yogurt.
- In a seperate bowl, toss together chicken, carrots, bell pepper, raisins, onions and cilantro.
- Pour dressing over chicken mixture, and toss gently to coat.
- Serve chicken salad in cabbage leaves and top with crushed peanuts and a squeeze of fresh lime juice.
