Peanut Butter Bacon Breakfast Burrito

Servings 8 10 inche burritos

Ingredients
  

Potato Hash

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 12 golden potato blanched and quartered
  • saute all ingredients together lightly salt and pepper

Georgia peanut sauce

  • 1 cup crunchy peanut butter
  • 1/2 cup whole grain mustard or creole mustard
  • 1/2 cup hoisin sauce or smokey BBQ sauce
  • mix all the ingredients together set aside

Bacon

  • 1 lb of sliced bacon
  • Cook bacon between two sheets of parchment and two sheet pans that way your baking will be crispy and flat

Eggs

  • 8 Eggs Scrambled
  • For every two eggs add 1 tablespoon of heavy cream this will ensure your eggs will be light and fluffy

Instructions
 

  • BUILD
  • slightly warm your tortilla
  • add Georgia peanut sauce
  • add your hash (not too much)
  • 2 strips bacon as many strips (3 should be the max)
  • add your light and fluffy eggs
  • fold and wrap

Notes

Chef side note: you can use the fat from the bacon to cook your hash - this is what we call levels of flavor
Chef Side Note: You can prep these burritos ahead. Tightly wrap each burrito in foil and refrigerate. Warm in foil before serving.
