Ingredients
- 2 lbs. ground chicken
- 2 Tb sesame oil
- 2 garlic cloves grated
- 1 small onion diced
- 1 1/2 Tb fresh grated ginger
- 1/2 cup hoisin sauce
- 1/2 cup water chesnuts diced
- 3/4 cup diced shiitake mushrooms
- 3 green onions chopped (both white and green parts)
- 1/4 cup cilantro chopped
- 1/4 cup crushed peanuts for garnish
- Iceberg or Butter Lettuce for wraps
Peanut Sauce Ingredients
- 3 Tb creamy peanut butter
- 2 tsp brown sugar
- 1 Tb fresh lime juice
- 2 Tb chili garlic sauce
- 1 tsp fresh grated ginger
- 1 Tb soy sauce
Instructions
- Saute ground chicken in sesame oil untilcooked through. Drain if mixture is a little watery.
- Add shiitake mushrooms and onion and sauteuntil mushrooms have softened and gotten a caramel color.
- Add ginger, hoisin, water chestnuts andgreen onions. Let chicken mixture simmer on low while you prepare the peanutsauce.
- Mix all peanut sauce ingredients together untilsmooth and warm up in a sauce pan on low/med heat until it is thinned outslightly.
- Fold into chicken mixture. Stir untilcombined and continue simmering on low until peanut sauce is evenlydistributed.
- Garnish with fresh cilantro and choppedpeanuts and serve in lettuce wraps.
