Saute ground chicken in sesame oil untilcooked through. Drain if mixture is a little watery.
Add shiitake mushrooms and onion and sauteuntil mushrooms have softened and gotten a caramel color.
Add ginger, hoisin, water chestnuts andgreen onions. Let chicken mixture simmer on low while you prepare the peanutsauce.
Mix all peanut sauce ingredients together untilsmooth and warm up in a sauce pan on low/med heat until it is thinned outslightly.
Fold into chicken mixture. Stir untilcombined and continue simmering on low until peanut sauce is evenlydistributed.
Garnish with fresh cilantro and choppedpeanuts and serve in lettuce wraps.
