PEANUT BUTTER COTTAGE CHEESE CHEESECAKE

Ingredients
  

For the Crust

  • 2 cups pretzels
  • 1 1/2 cups Nilla Wafers
  • 1/2 cup peanuts
  • 12 Tb unsalted butter

For the Filling

  • 1 cup heavy whipping cream
  • 3 Tb sugar
  • 1/2 cup cottage cheese
  • 3 Tb creamy peanut butter
  • 1/2 cup rough chopped dark chocolate
  • 1/2 cup roughly chopped peanuts
  • Pinch of Maldon salt

Instructions
 

Crust Instructions

  • Add pretzels, Nilla wafers and peanuts to a food processor and pulseuntil chopped but not powdery.
  • Melt butter in a skillet. Add mixture until combined with butter.
  • Spray a pie pan with non-stick spray and spread out pretzel wafer/nutmixture on bottom of pan and slightly up sides and press down until it’s even.

Filling Directions

  • Whip cottage cheese for 3-4 minutes until lumps are smoother.
  • In a separate bowl, whip heavy cream and sugar until stiff peaks form.
  • Add cottage cheese and peanut butter to heavy cream mixture and whip againuntil combined for 1 more minute.
  • Add chopped chocolate and peanuts to top of pie and freeze for 2 hours.Take out 15 minutes before ready to serve.
  • Before serving, sprinkle a pinch ofcrunchy Maldon salt on top and enjoy!
