Ingredients
For the Crust
- 2 cups pretzels
- 1 1/2 cups Nilla Wafers
- 1/2 cup peanuts
- 12 Tb unsalted butter
For the Filling
- 1 cup heavy whipping cream
- 3 Tb sugar
- 1/2 cup cottage cheese
- 3 Tb creamy peanut butter
- 1/2 cup rough chopped dark chocolate
- 1/2 cup roughly chopped peanuts
- Pinch of Maldon salt
Instructions
Crust Instructions
- Add pretzels, Nilla wafers and peanuts to a food processor and pulseuntil chopped but not powdery.
- Melt butter in a skillet. Add mixture until combined with butter.
- Spray a pie pan with non-stick spray and spread out pretzel wafer/nutmixture on bottom of pan and slightly up sides and press down until it’s even.
Filling Directions
- Whip cottage cheese for 3-4 minutes until lumps are smoother.
- In a separate bowl, whip heavy cream and sugar until stiff peaks form.
- Add cottage cheese and peanut butter to heavy cream mixture and whip againuntil combined for 1 more minute.
- Add chopped chocolate and peanuts to top of pie and freeze for 2 hours.Take out 15 minutes before ready to serve.
- Before serving, sprinkle a pinch ofcrunchy Maldon salt on top and enjoy!
