- 2 pounds top sirloin
- Fresh pineapple cubed
- Red bell pepper cubed
Steak Marinade Ingredients
- 1/4 cup creamy peanut butter
- 1/4 cup sriracha
- 1/4 cup tamari or soy sauce
- 2 tbsp sesame oil
- 2 tbsp olive oil
- 1 tbsp sherry vinegar
- 1 tbsp sherry wine
- 1 tbsp honey or dark maple syrup
- 4 cloves garlic, diced
- 1 tbsp fresh grated ginger
- juice and zest of 1 lime
Chai Spice Seasoning Ingredients
- 2 tsp ground cloves
- 2 tsp cardamom
- 2 tsp allspice
- 2 tsp nutmeg
- 4 tsp cinnamon
- 6 tsp ground ginger
Peanut Chai Vinaigrette Ingredients
- 1 garlic clove, minced
- 2 tbsp balsamic vinegar
- 1/4 cup olive oil
- 1 tbsp creamy peanut butter
- 1 tsp honey
- 1 tsp fresh lime juice
- 1/2 tsp chai spice seasoning
- Kosher salt to taste
Instructions
- Mix marinade ingredients together and marinate steak for up to 12 hours.
- Discard marinade, dry off steak and cut into cubes. Skewer with fresh pineapple and red pepper.
- Grill until cooked to preferred temperature.
- While skewers are cooking, whisk together vinaigrette ingredients.
- Drizzle vinaigrette on skewers before serving.
