Steak and Pineapple Skewers with a Peanut Chai Vinaigrette

Ingredients

  • 2 pounds top sirloin
  • Fresh pineapple cubed
  • Red bell pepper cubed

Steak Marinade Ingredients

  • 1/4 cup creamy peanut butter
  • 1/4 cup sriracha
  • 1/4 cup tamari or soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp olive oil
  • 1 tbsp sherry vinegar
  • 1 tbsp sherry wine
  • 1 tbsp honey or dark maple syrup
  • 4 cloves garlic, diced
  • 1 tbsp fresh grated ginger
  • juice and zest of 1 lime

Chai Spice Seasoning Ingredients

  • 2 tsp ground cloves
  • 2 tsp cardamom
  • 2 tsp allspice
  • 2 tsp nutmeg
  • 4 tsp cinnamon
  • 6 tsp ground ginger

Peanut Chai Vinaigrette Ingredients

  • 1 garlic clove, minced
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 1 tbsp creamy peanut butter
  • 1 tsp honey
  • 1 tsp fresh lime juice
  • 1/2 tsp chai spice seasoning
  • Kosher salt to taste

Instructions
 

  • Mix marinade ingredients together and marinate steak for up to 12 hours.
  • Discard marinade, dry off steak and cut into cubes. Skewer with fresh pineapple and red pepper.
  • Grill until cooked to preferred temperature.
  • While skewers are cooking, whisk together vinaigrette ingredients.
  • Drizzle vinaigrette on skewers before serving.
