Thai Chicken Pizza
Ingredients
For the Spicy Peanut Sauce
- 2 tablespoons Sesame oil
- 2 each Garlic cloves, minced
- 1/2 cup Creamy peanut butter
- 1/2 cup Hoisin sauce
- 1 tablespoon Honey
- 1 tablespoon Soy sauce
- 1 teaspoon Fresh Lime Juice
- 2 teaspoons Rice Wine Vinegar
- 1/2 teaspoon Ground Ginger
- 1/4 teaspoon Red pepper flakes
- 2 tablespoons Water
For the Pizza
- 2 cups Cooked chicken, diced (I use a rotisserie- super easy!)
- 1 each Pizza dough, rolled out to desired thickness
- 2 cups Mozzarella cheese, shredded
- 1/3 cup Carrots, shredded
- 4 each Green onions, diced
- 1/2 cup Bean sprouts
- 2 tablespoons Roasted peanuts, chopped
- 3 tablespoons Fresh cilantro, chopped
- 3 tablespoons Fresh mint, chopped
- Fresh lime juice squeezed on top at end to garnish
Instructions
For the Spicy Peanut Sauce
- In a medium saucepan, sauté garlic cloves in sesame oil until fragrant.
- Add the rest of the sauce ingredients to garlic and bring to a simmer to thicken, approximately 2-3 minutes.
- In a medium bowl, add the chicken and toss with half the sauce.
For the Pizza
- Spread remaining sauce on dough and top with mozzarella, sauced chicken and shredded carrots.
- Bake or grill (according to package instructions if you are using store bought dough) until crust is golden and cheese is melted.
- Garnish with green onions, bean sprouts, roasted peanuts, fresh cilantro and mint. Squeeze some fresh lime juice on pizza before serving!
