Ingredients
  

  • 1 1-1.5 pound beef tongue
  • 2 cinnamon sticks
  • 5 cloves
  • 3 pepper pods of choice
  • 1 bay leaf
  • 1 tsp salt
  • 1 12 oz. bag of chopped frozen spinach
  • garlic cloves to garnish
  • 1/2 cup peanut butter
  • 1 cup beef broth
  • 2 tbsp peanut oil
  • 2 tbsp vinegar
  • 3 cloves chopped garlic
  • 1 tbsp cornmeal
  • 1/2 tsp paprika

Instructions
 

  • Bring water to boil, add cinnamon sticks, cloves, pepper, bay leaf and salt. Add the tongue and cook until tender or for about 1½ hours. Remove the tongue, peel it and place it on a bed of cooked spinach and garnish with garlic clove garnish.
  • Prepare the peanut butter sauce. In a medium sized skillet cook the garlic until tender, add peanut butter, beef broth, oil vinegar, chopped garlic, and paprika - bring to boil then simmer for 5 minutes. Thicken with cornmeal and spread over the tongue.
