Pork or Chicken Satay

Ingredients
  

Marinade Ingredients

  • 6 oz. plain yogurt
  • 6 oz creamy peanut butter
  • 6 oz pineapple juice
  • 1 tbsp grated ginger
  • 1 tbsp lime juice
  • 2 tbsp rice vinegar
  • 1 tbsp red chili pepper paste
  • 2 lbs pork or chicken

Sauce Ingredients

  • 6 oz pineapple juice
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp teriyaki sauce
  • 1 tbsp red chili pepper paste
  • 1 tbsp ground ginger
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 3/4 cup creamy peanut butter

Instructions
 

For Marinaded Ingredients

  • Whisk ingredients together in a mixing bowl. Cut meat into stips appropriate to thread onto skewers. Mix meat strips into sauce and marinate in the refrigerator for at least one hour to overnight. Thread meat onto skewers and grill. Serve warm with satay sauce.

For Sauce

  • In a sauce pan, mix all ingredients except peanut butter over low heat until warm. Remove from heat and whisk in peanut butter. Serve with warm, marinated meat.
